Ceylon Cinnamon

Cinnamomum zeylanicum, also known as true cinnamon, is a bushy evergreen tree of the laurel family that is native to Ceylon, which changed its name to Sri Lanka in 1972.

History

Cinnamon has been used by humans for thousands of years dating back to Middle Kingdom Egypt employing it as a perfuming agent for embalming.
It became a status symbol in Medieval Europe after being introduced by Arab merchants leading to several conquests to find the spice’s mysterious source.
Whoever held the island of Ceylon had a virtual monopoly on the coveted spice until the 1800s when it had begun to be cultivated in other parts of the world.

Harvest

Ceylon cinnamon is harvested twice a year, right after the rainy season when the humidity picks up and makes the peeling of the bark easer. The soil conditions are monitored vigorously as waterlogged soil can lead to bitter-tasting cinnamon.

Anatomy

When a cinnamon tree is around two years old, they cut back the plant and cover it with soil. This causes shoots to emerge out of every side the following year. The shoots are then cut, and their bark stripped and dried into cinnamon quills.

Etymology

Its name derives from the Hebraic term amomon, meaning fragrant spice plant.

Only 55% of its essential oil is cinnamaldehyde which gives it a delicious mild flavor compared to Cassia. It is also is a powerful anti-inflammatory.

Historical Uses

Medieval physicians used cinnamon in medicines to treat coughing and sore throats. The romans used it for ailments of the digestive tract.
